Dark meat chicken, flat egg noodles, bag of mixed vegetables and cream of chicken or cream of mushroom soup.  

Cook chicken, boil noodles and drain.  Combine all together in a casarole dish top off with parmasian cheese and bake for 10 to 15 minutes.  Serve with a salad and garlic bread Viola it's a great meal.  

P.S.  Don't forget to follow the soup directions I think you add 1 can of milk to the soup mixture.

Lemon butter chicken.  Hang on, I have to go find the recipe...

Hang on.  I have to call Mom.  Lost the recipe.  But you could do oven fried chicken.  Coat it in salted flour (and paprika if you like) and put it in a pan with melted shortening in the bottom for 30 minutes at 425F, turn, cook another 30 minutes.  Skin side down the first time, up the second time after you turn it.

Alright, I won't keep you waiting.  She doesn't do email and isn't answering the phone.  Lemon butter chicken is as easy as it sounds.  Use less lemon juice than butter, like 3/4 to 1/2 as much, and she always made it in an electric frying pan.  I'm sure you could bake it, too.  Be sure to turn it.  As the liquid goes dry, add water.  Not lemon juice, just water.  Make gravy out of the liquid remaining.  That lemon-butter-chicken gravy over mashed potatoes is to die for!  AND it takes no salt.  This is a good hint for those who are trying to cut down on salt--a tiny bit of lemon livens the flavor up enough to satisfy that desire for the taste of salt.
