  1. taco's....fry up the meat and then your done!  Sloppy joes are just as easy!

    it kinda depends on what you wanna make.  Salads are really easy, and you can spice things up with tuna, or chicken nuggets...or even canned crab, salman or chicken.


  2. Mexican Salsa Chicken

    1/3 cup flour

    1/8 tsp garlic powder

    1/8 tsp paprika

    1/8 tsp chili powder

    4 boneless chicken b*****s, pounded flat

    3 tbs oil

    1 container fresh salsa

    4 oz (1 cup) shredded Monterey Jack or Jalapeno Jack cheese

    Combine first 4 ingredients in shallow dish or ziplock bag. Coat chicken with mixture. Heat oil large skillet over medium high heat. Cook chicken 3-4 minutes on each side or until lightly brown. Reduce heat and pour half the salsa into skillet and spoon some salsa over chicken, cover, simmer for 5 minutes. Add cheese on top of chicken and salsa. Cover until cheese melts. Makes 4 servings.

    Quick Chicken Parmesan

    4 Boneless Chicken b*****s, pounded flat

    1 jar Spaghetti Sauce (I use Prego mushroom and garlic)

    3 oz. Mozzarella Cheese, grated

    2 cups Italian Bread Crumbs

    2 oz. Parmesan Cheese

    1/2 tsp garlic salt

    1 egg, plus 1 tbs water, slightly beaten

    Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

    Serving Suggestions:

    I serve this with Fettuccini Alfredo and garlic bread.

    Creamy Fettuccini Alfredo

    1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed

    ¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)

    ½ cup margarine (I use I Can’t Believe It’s Not Butter Light)

    ½ cup milk or half and half (I use 1% or 2% low fat)

    8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

    In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.

    Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.


  3. Chicken and corn casserole

    Corn Casserole:

    1 can corn, drained

    1 can cream corn

    8oz sour cream

    1 stick butter, melted

    1 8.5oz box Jiffy Corn Muffin Mix

    1 or 1 1/2 cups cheddar cheese

    Grease 2 quart casserole dish

    Combine all ingredients, except the cheese and pour into prepared dish

    Bake at 350 for about 45 minutes.

    Top with cheese and bake another 15 minutes or until melted.

    Serve with store bought rotisserie chicken and microwavable veggies.  

    Simple, easy, DELICIOUS.

  4. Easy and inexpensive. Rice-a-roni. Find  flavor your family likes, I use broccoli au gratin, Start with a chopped onion and a tsp of minced garlic, saute in 2 tbsp butter, once onion translucent add rice and vermicelli and follow package instructions. After liquid is added. add approx 1 lb cubed cooked chicken. Let simmer for 15-20 minutes. (Left over chicken can be used). My family loves this, they ask for it a least once a week. With all the flavors of Rce-a-roni available you can use beef or pork as well.

    1- 6 ounce can of tuna or chicken,turkey, ham

    1- can of cream of mushroom or cream of chicken soup,or cream of

    celery, or cheese soup

    1/2 can of milk (use soup can)

    add to;

    4-cups of cooked macaroni, or your choice of  cooked pasta

    optional; 1 can of peas or corn or veggie of you choice

    salt and pepper to taste

    heat in large pan until warmed,

    just before serving crumble ritz crackers on top

  6. Stirfry

    really easy healthy and yummy,

    just cook some noodles and fry some vegetables you like and mabye some tofu and then add it to the noodles with some soy sauce.


  7. Might help to tell us what you like.

    I like to take store bought macaroni & cheese (like velveeta) and add to it after cooking it - broccoli, cooked up polish sausage, garlic & seasoning (cajun is great!).  It's a one pot meal and takes mac & cheese to a new place of YUM!

    7Up Chicken is so tasty!  You put chicken b*****s in the crockpot and pour a can of 7up over them (not diet), couple pats of butter, seasoned salt.  Serve with noodles or rice.

    Mix some cooked ground beef with terriyaki sauce and wrap in a tortilla with cheese.  :D  

    Baked French Fries with cooked ground beef, enchilada sauce and cheese.

    Oh, and if you're thinking fancy and for more people - Shepherd's Pie!  You sautee the vegetables (carrots, onion, garlic, celery, etc), mix cooked ground beef,  worcestershire sauce, flour for gravy, then top with mashed potatoes.  You can cut the mashed potatoes with cooked cauliflower (half and half) for more veg content and lower calories, and add some cheese and herbs to the mashed potatoes for flavor.  Then bake it in the oven to warm it thru.  There are recipes all over the net for Shepherd's Pie - easy and soooo good!
