  2. Aloha! There are a lot of easy Hawaiian dishes to make with a variety of flavors. Beware of recipes on recipe sites that just have "Hawaiian" in their name...it usually means they have just added pineapple and that there is nothing "Hawaiian" about it, except the pineapple, which isn't even native to the Hawaiian islands. Hawaiian does not necessarily equal pineapple. Here are a few of our favorite easy Hawaiian recipes.

    Our favorite easy pupu's (appetizers)

    The BEST HAWAIIAN AHI POKE!

    1 1/2 - 2 pounds Fresh (sushi grade)

    Big eye Ahi Tuna loin (Fish must be very fresh!)

    1 tsp Maui red salt or sea salt

    1/2 tsp pepper flakes

    1/2 tsp pure sesame oil

    1 tbs lite soy sauce

    1 medium Maui sweet onion

    Sesame seeds to sprinkle on

    chives for garnish

    Cut Ahi loin into small cubes and place in chilled bowl. Chop sweet onion into small pieces place in bowl,

    mix in salt, pepper flakes, soy sauce,sesame oil.

    Mix gently in chilled bowl.

    Sprinkle sesame seeds and chives for garnish.

    Easy Boiled Peanuts

    Ingredients:

    1 lb raw peanuts in the shell

    Hawaiian Salt, Sugar

    Star anise seed

    Cooking Instructions:

    Bring a half-filled saucepan (4 qt size) of water to a slow boil. Add 2 tablespoons salt and 2 tablespoons sugar. Add 1 whole piece star anise. Add peanuts, cover, and simmer low for 1 hour. (peanuts will look dark, wet, and saturated) Cool and serve.

    Kim Chee

    Ingredients:

    2 lbs Chinese cabbage

    1/2 C Salt

    4 C Water Seasoning: 2 tsp minced Red pepper

    3/4 tsp minced Garlic

    1/2 tsp minced Ginger root

    1/2 tsp Paprika.

    1/4 tsp Ajinomoto (MSG)

    1 Tbsp Sugar

    Cooking Instructions:

    Cut cabbage 1-1/2 inch lengths. Dissolve salt (table salt) in water. Soak cabbage 3-4 hrs. Rinse and drain twice. Add seasoning to cabbage in 1 qt. jar, cover loosely, and let stand at room temperature 1-2 days. In using cucumber instead of cabbage, sprinkle slices with salt. Let stand for 10-15 mins., rinse and add seasoning.

    All of the above is best enjoyed outside under the Mango tree with an ice chest full of beer and Hawaiian music...oh, and don't forget the sashimi with shoyu and wasabi.

    Easy Hawaii Main Course Dish

    Crockpot Kalua Pig

    Ingredients:

    4-6 lbs Pork butt

    3-4 Tbps Hawaiian salt

    Cooking Instructions:

    Sprinkle salt over pork butt and rub the salt into the pork. Place the pork butt in da crockpot on high for up to 6 hours or until the pork starts to fall apart when picked with a fork.

    Additional Comments:

    The pork may be a little greasy so I use paper towels to soak up the fat from the pieces that I'm going to eat but other than that it is sooo ono. This is for us mainlanders who cannot make one imu in our backyahd. Aloha and enjoy!!!

    Chicken Luau

    Ingredients:

    1-2 lbs Boneless chicken breast

    1 can Coconut milk

    Hawaiian salt

    Black pepper

    1 can Chopped spinach

    Cooking Instructions:

    In 2 1/2 quart crock pot put the chicken breast and sprinkle with Hawaiian salt and black pepper. Add 1 can coconut milk. Leave on low for several hours. When chicken is cooked, shred and add 1 can spinach (no need drain). Serve over rice.

    Additional Comments:

    I usually cook the chicken the night before all night, then shred it in the morning. When ready to eat just warm up about an hour before we eat.

    Teriyaki Beef

    Ingredients:

    3-5 lbs Beef (Thinly Sliced)

    2 C Aloha Shoyu

    1 C Honey

    1/2 C Sesame oil 1/4 C crushed fresh Garlic

    1/4 C crushed Ginger

    Cooking Instructions:

    Mix all the ingredients and stir until honey is mixed in well. Add thinly sliced beef and lomi well. Place in zip lock bag or vacuum sealer bag. Push all air out of bag and let marinate overnight. Pulehu (BBQ) the meat and will cook fast.

    This is my fathers recipe and it was ono for years

    Easy Hawaiian Sides

    The favorite side for the local's is steamed white rice.

    Another favorite is Macaroni Salad and the Mayonnasse must be Best Foods!

    Aunty Sandy's Macaroni Salad

    Ingredients:

    1 bag medium macaroni

    2-3 Del Monte sweet pickles (save juice from bottle)

    Grated carrot (one or two, depending on how much carrot you want)

    1/4 to 1/2 cup celery 1 small can sliced olives

    3 eggs, boiled

    1 cup mayonnaise

    2 tsp mustard

    Boil macaroni according

    Cooking Instructions:

    Boil macaroni according to pkg directions, drain, rinse w/cold water. Mix macaroni, chopped sweet pickles and sweet pickle juice (2 tsp or to taste), onions, carrot, celery and olives. Add mayonnaise mixed w/2 tsp mustard, salt and pepper. Add 2 hardboiled eggs, chopped, very gently into mixture. Taste, may need more mayo. When done, put 1 sliced hardboiled egg on top, sprinkle with paprika, if desired.

    Additional Comments:

    This recipe went to many family gatherings at Ala Moana park - and never had leftovers! Sooo ono with teriyaki and other local food!

    Lomi Lomi Salmon

    Ingredients:

    1 lb. salted salmon

    2 med. onions, chopped

    4-5 tomatoes chopped

    2 bunch green onions, chopped

    Cooking Instructions:

    Soak salmon in water for 2 to 3 hrs., changing water several times. Drain and remove skin, bones. Shred with fork or fingers, into small pieces. Place salmon, tomatoes and onions into bowl. Refrigerate until well chilled. Top with thin layer of cracked ice(1 hr. before serving) Lomi green onions, add to salmon mixture.

    If unsalted salmon is used, rub salmon with rock salt and let stand overnight. Rinse and soak in clear water 1 hr. or more.

    Condiments with every meal...soy sauce and Hawaiian chili pepper water.

    Last but not least....dessert!

    Haupia

    Ingredients:

    5 Tbsp Cornstarch

    4 Tbsp Sugar 1/8 tsp Salt

    2 C Coconut milk

    Cooking Instructions:

    Make a smooth paste of the dry ingredients and 1/2 cup of coconut milk. Add remaining coconut milk and cook on low heat, stirring rapidly. Cook until clear and thick enough to coat a spoon. To avoid curdling, be sure to use low heat. Pour into a shallow pan and set in a cool place until firm.

    For thick haupia, or one that will hold its shape when cut, increase the cornstarch to 2 1/2 Tbsp.

    If you can't find canned coconut milk here's how to make with fresh coconut.

    Coconut milk:

    Pour 2 cups boiling water over 4 cups grated coconut. Let stand for 20 minutes; strain and measure

    Guava Cake

    Ingredients:

    1 pkg Duncan Hines Yellow Cake Mix

    1 1/3 C Guava juice

    3 Eggs

    1/3 C Vegetable oil

    1 8-ounce Package cream cheese, softened

    1/3 C Sugar 1 tsp Vanilla

    1 small pkg Cool Whip, thawed

    2 C Guava juice

    1/2 C Sugar

    1/4 C Cornstarch

    Cooking Instructions:

    Bake cake according to package directions, substituting guava juice for water. In a medium mixing bowl, beat cream cheese with hand mixer until fluffy. Add sugar and vanilla and beat in. Slowly fold in the Cool Whip and refrigerate until ready to use. In a medium sauce pan, bring the 2 cups guava juice and sugar to a boil. Make a paste out of the cornstarch and a small amount of water. Remove guava juice from heat and stir in the cornstarch mixture. Return to heat and bring back to a boil and boil for one minute. Cool in refrigerator.

    To assemble cooled cake:

    Thickly ice the cake with all of the cream cheese mixture. Glaze the top of the cake with guava gel. Refrigerate until ready to serve.
