Easy lunch for vegetarians?

  1. A big salad with onion, green peppers, corn, and other vegetables.

    Veggetarians fajitas.  Grill up lots of vegetables (red and green peppers, onions, mushrooms, etc.) with hot sauce, or a taco seasoning packet, and then throw it on a tortilla.

    Grilled eggplant.


  2. Ok, here is what I have:

    pan fry a veggie burger, seasoned with chili powder

    put that inside of a pita with  red pepper hummus

    eat with a fruit of any sort, I find it goes nicely with water melon.

    I also like it with a rice cake... chocolate is my fave ;)

  3. i know a very simple fried rice.....take a pan wid a like a tbsp of oil and heat the oil and add frozen mixed vegetables(as much as u want) and stir fry them for like 2-3 minutes on medium heat and add salt and pepper to the cooked veggies, add cooked rice and toss them all together....and serve hot :)

  4. I like cooked and chilled brown rice with some sugar and soy milk.  It's like a makeshift rice pudding.  It's filling and gives me a sugar boost.  You can put fresh fruit in it too.

    I also like heating up a frozen block of spinach with vegan spread and salt.  That's just me though.  I am probably in the minority on that one.

    A toasted whole wheat bagel with tofutti better than cream cheese and jelly is pretty good...especially with a nice big glass of strawberry soy milk.

    My ultimate lunch is a big salad with all of the good stuff and none of the lettuce...tomatoes (which you could leave out since you don't like them), onions, mushrooms, squash, peppers, cucumbers, chilled peas, and so on.

    I am weird though...so you don't have to try any of my ideas.

  5. Hummus sandwich:  

    Liberally spread hummus on lightly toasted bread, then add veggies of your choice like:  spinach, sprouts, cucumber, jalapenos, pepperoncini, zucchini, onions, shredded carrots

    Bean burrito:

    Make refried beans or open a can of vegetarian refries, heat them slightly, then add to warmed tortillas with guacamole, regular or vegan sour cream, and salsa if you can stand the tomatoes.  You can also add some spanish rice to this.

    Everything but the kitchen sink Salad:

    Just raid your fridge and take a whole bunch of crazy ingredient and mix them together.  Toss on some dressing or some lemon juice and your set.
