  1. Gobi Parantha...Yum Yum ....My favourite

It is a healthy snack mostly taken by North-Indians.

    Ingredients

    ½ cup Cauliflower(grated)

    1 no. Green Chilies(chopped)

    1 bunch Coriander leaves(chopped)

    ¼ tsp. Red Chili Powder

    ¼ tsp. All spice powder

    50 gms. Flour

    1 tbsp. Clarified Butter

    Salt to taste

    Directions

    Knead flour adding some water.

Also squeeze water out of cauliflower and then mix spices in it.

make one 4 inch chapati size roti and place mixed grated cauliflower, green chilly, coriander leaves and other spices mixture on that rolled chapatti. Make another chapati of the same size and cover the first one securing the ends.

Heat a flat pan and fry the paratha on both sides using desi ghee till golden brown.

Serve hot with yogurt/butter. Butter is my choice......Upal.

  2. Aloo Tikkis are a great snack.

They are almost like mini Hash browns.

4 large Potatoes boiled, peeled and grated

    3 tablespoons Corn flour

    Salt to taste

Add the corn flour and salt to the grated potatoes and mix well. It is important that the mixture become dough like and not crumble. If the dough is crumbly then add more corn flour.

Take 2 table spoons of the potato mixture and roll into a ball, flatten on the palm of your hand. Again, the dough should not crumble.

Shallow fry the patties/"tikkis" over medium heat until golden brown and crisp on both sides. You may do this ahead of time. Place the tikkis on a non-stick pan and cover with foil. Heat at 275 degrees for 15 minutes before serving.

Serve hot with Chole and mint chutney or tamarind chutney

    Besan(gram flour)-1 cup(binder)

    water-3/4 cup

    Corriander-a little

    salt  chilli powder-upto your taste

oil to deep or shallow fry

    Method:

Make a batter with besan, salt, chilli powder, water and corriander. The water level is that it must not flow but must be thick. Now take the bread slices and spread the batter on the finely cut slices and deep fry till golden brown.
