Easy peasy vegetarian healthy homecooking?

I'm 17 and cook for just my dad and me, sometimes my mum

so want to make small portions

my dads a bit fussy and doesn't like the texture of vegetables unless they're unnoticable so please no stews or roast veg recipes

willing to work with tofu, soya, mushrooms, pasta, nuts, beans etc

  1. I'm not vegetarian myself but my mate loves the food i cook him!

    His favourite is chilli non carne!

    Depending on how much you want to make just take tinned tomatoes, baked beans, sweetcorn (tinned), finely chopped onion, mushrooms and chilli powder and a wee bit of garlic, put it all in a pan and let it simmer until everything is cooked, boil up some rice and voila! chilli non carne!!!!

    I use practically the same recipe for veggie bolognaise (i apologise for the spelling!) just subsitute the chilli power for dried/fresh herbs (oregano, mixed herbs, basil) add some grated carrot, make sure it is all cooked out and have it with pasta!!!

    If (like my dad!) he is more of a meat and 2 veg kind of guy get some big, flat mushrooms, put some fresh breadcrumbs, cheese and a wee bit of herbs on top, bake or grill them off and have them with big wedge cut chips..... MMMMMMMM!


  2. Veggie paella is the solution. I could live on this stuff.

    3 tbsp olive oil

    1 small onion, sliced

    3 cloves garlic, chopped

    1 small red pepper and 1 small green pepper, diced

    1/2 cup (that's CUP and not MUG) of peas (frozen are fine)

    1 large tomato, chopped

    1 tsp paprika

    250ml calasparra paella rice (you can get it in ASDA and it's cheap enough) - measure it in the same jug as you'll measure the stock

    550ml veg stock (just one cube)

    a pinch of saffron, stirred into the stock

    fresh parsley, chopped

    Heat olive oil in a large non-stick frying pan. Add the onion, cover and fry for a couple of minutes. Add the garlic, cook stirring for couple more minutes. Add the peppers and peas, and stir cooking for another couple of minutes.

    Make a well in the middle of the vegetables. Put the tomatoes in the well and throw the paprika on top of the tomatoes. Mix it all together and into the vegetables.

    Scatter the rice over the vegetables and stir, toasting the rice for just a minute or so. Then pour the stock over, stir well, and cook on a high heat uncovered for five minutes. Add the parsley. Turn the heat down to medium-low and cover, cook until all the stock has absorbed, stirring occasionally.

    Don't be fooled by Quorn. It is an entirely artificial protein, which cannot be good.

  3. One recipe I love to make is a simple one.

    You use a packet of quorn (or tofu)

    2 large oranges

    1 clove of garlic

    2 small onions OR 1 large onion

    And some mixed herbs or you can use just basil/ etc.

    And some nut flavour oil.

    Put the onions in a wok with the tofu and start frying.  Juice the oranges and put that in the wok and put some mixed herbs in  and cook until you think its done.

    Serve with rice or pasta if you fancy a change:-)

    Its as simple basic one and it only takes me a few minutes or so to make. I havent got a name for it but hey maybe you can name it:-)

  4. Try Grilled Tofu with Mesquite BBQ sauce. super delicious! Or Rissotto, or veg. lasagna.  They all are healthy and taste awesome.

  5. I would suggest pastas. They're very simple and tasty, and usually healthy.

    Not sure if you eat cheese/cream, cos they help make awesome pastas if used right. I'm assuming you don't eat dairy products, but if you want more info about it, send me an email and I'll give you some recipes.

    To make nice pasta dishes, cook pasta as per packet directions. You can use spirals, fettucine, bows, whatever you like. Once the pasta is cooking you start the rest of the ingredients. Some suggestions:

    *onion, garlic, your choice of herbs

    *beans, either fresh green beans, or whatever beans you like, peas

    *mushrooms, corn kernals, sundried tomatoes, olives, baby spinach leaves, celery, tomatoes, tofu, broccoli, cauliflower or whatever veges you like.

    Using a little bit of oil, lightly fry whatever veges you like in the fry pan (leaving leafy veges, eg spinach leaves until just before you serve, otherwise they shrink into practically nothing). Once veges are almost cooked, but still crispy, add your flavourings, garlic, tomato paste, brought pasta sauces, or you can even use tomato/bbq/sweet chilli sauces if you like. You only need a couple of tablespoons of whatever sauce you like. Mix the sauce into the veges, then add pasta once cooked. Add salt and pepper if you want, then baby spinach etc, and serve straight away. Enjoy!!!

    If your dad doesn't like a lot of veges, make the proportion of pasta:vegetable, more pasta to vegetables. I prefer lots of veges, but the great thing about pasta, you can make it exactly how you like it.

    Vegan chili made with black beans, kidney beans, corn, green beans, chili sauce, taco seasoning, tomatoes, green peppers & onions.

    Baked/fried/BBQ tofu, seiten, TVP, or tempeh.

    Cook and fry a large portobello mushroom and make a burger.

    Stir fry and season rice/couscous/quiona, beans, and vegetables.

    Bean, rice, & veg cheese burrito, taco, or quesadilla.

    Sandwiches (like tempeh lettuce & tomato, tofurky cheezsteak, roasted vegetable etc).

    Breaed or stuffed mushrooms

    TVP and bean tacos, cook tvp with cornstartch, water, and spices to make tacos

    Scrambled tofu with vegan cheese, bell peppers and onions

    Falafel wrap with tahini dressing

    Lettuce or veggie wrap with hummus or vegan mayo

    Fried, baked, grilled, or stuffed veggies

    Stir fry with vegetables and tofu, tvp, tempeh or seitan

    Sandwhich, on french bread or sourdough with choice of fillings, vegan grilled cheese

    Salad, fruit, vegetable, vegan chicken, etc.

    Soup, tomato, butternaut, creamy mushroom, black bean, etc.

    Pasta, basic with sauce and vegetables with oil and seasoning

    Grilled seiten steak with mash potatoes and gravy

    Mashed califlower or potatoes with seasoning and vegetables

    Vegan bagel pizzas, with bagel, vegan cheese, pizza sauce and veggies and cook in oven, or instead of bagel use french bread

    Peanut butter with rice and veggies, or toasted bread/bagel, on toasted bun with fried bannas

    Toasted vegan cream cheese bagel with herbs and tomato

    Make tofu fillets or cutlets breaded with sauce

    Quick cassorole, mix your favorite veggies choped together with olive oil and fry, add nutrional yeast sauce; with vegan margerine mix together with breadcrumbs and put in a cooking dish poor mixed vegies onto it and then cover with more of the breadcrum mix and top layered with green beans and cook for 10-40m or replace breadcrumbs with pasta of your choice

    Easy vegan mac and cheese, cook pasta of your choice, make vegan cheese sauce and pour of cooked pasta.

    Make a burger with either pre-made vegan burger patties or cooked portobello mushroom or cooked mushed mixture of vegetables or beans and add your favorite fillings, or make sloppy joes with a cup of cooked TVP covered in BBQ sauce in a cup of water, mix onions, tomatoe, bell peppers, etc cook until done serve on top of buns

    Vegan sushi with brown rie, white rice, couscous, or quoina, vegetables of your choice, maybe tofu, tepmpeh, portobello mushrooms or setien and wrap in nori, roll and cut

    Paprikash, cook your favorite vegetables with favorite legumes and add a lot of parpika and onions and green bell peppers

    Chineese fried rice, fry brown rice and vegetables in a skillet with olie oil and add soy sauce or braggs liquid aminos and liquid smoke

    Vegan hot dogs, cook Smart Dogs or another brand of vegan hot dogs and put in a hot dog bun with your favorite condiments, even make chilli dogs or frito pie

    Vegan fish tacos, grill tofu and wrap in seaweed dazzle with olive oil and wrap in tortillas with lettuce and dressings of your choice

    Bake a potato add your fixings, make a bbq potato with bbq sauced setien, a broccli and cheese potato with brocli, vegan cheese, and vegan butter, etc

    Cook cauliflower, squas, broccli, and peas together, mush slightly add vegan cream cheese, or vegan sour cream, or vegan butter

    Power vegan smoothie with fresh fruits of your liking, plant milk, bannas or tofu, flaxseeds, pumpkin seeds, and maybe a sweetner of your choice; you can also add nuts, spirluna, protien powder, etc

    Quick vegan waffles or pancakes with suryp, vegan butter or vegan cream cheese, and fruit

    Cereal or oatmeal with fortified alternative to milk (such as soy milk, almond, rice, hemp, etc), with nuts and fruits on the side (or mixed in!)

    Tempeh bacon with tofu scramble
