  2. Quick easy lunch = Zucchini Slice

    Combine in a bowl:

    1.5 cups grated zucchini

    1 chopped onion

    1/2 cup grated cheese

    1/2 c self-raising flour

    1/2 tbs chopped parsley

    1/4 tsp each oregano, rosemary & basil (or I just use a shake of mixed herbs in a jar :D )

    pepper

    1/2 tsp vegetable stock powder

    Lightly beat 3 eggs, 1/4 milk & 1 tbs tomato paste (or sauce/ketchup works just as well.) Fold through zucchini mixture, pour into greased quiche plate.

    Microwave 10 - 12 mins on MED, let stand 5 mins before serving.

    or oven bake moderate about 25 - 30 mins.

    I "invented" a dish that is similar to curry - except we don't like curry so it has no curry in it lol - we call it Nurry Chicken - cos it's NotcURRY (we aren't vegetarian) but leave out the chicken when vegetarian father-in-law visits!

    "Nurry" Vegetables:

    Chop chunks of lots of vegies, eg, potato, pumpkin, sweet potato, zucchini, carrot, broccoli, cauliflower, eggplant.

    Simmer in 1L of vegetable stock until vegies are cooked

    Stir in small can light coconut cream & 1 - 2 tbs tomato sauce until heated (may need to thicken with a little cornflour blended with water depending on amount of vegies)

    Serve with rice.

    NGREDIENTS for 4 people

        * 8 (8 inch) flour tortillas

        * 2 tablespoons vegetable oil

        * 1 red onion, thinly sliced

        * 1 green bell pepper, seeded and sliced into strips

        * 1 red bell pepper, seeded and sliced into strips

        * 1 teaspoon minced garlic

        * 1 yellow squash, halved and sliced into strips

        * 1/2 cup salsa

        * 1 teaspoon ground cumin

        * 1/2 teaspoon salt

        * 1 cup shredded Monterey Jack cheese (animal rennet free)

        * 1/4 cup chopped fresh cilantro

      

    DIRECTIONS

       1. Wrap tortillas in aluminum foil, and place in oven. Turn heat to 350 degrees F (175 degrees C). Bake for 15 minutes, or until thoroughly heated.

       2. In a 10 inch skillet, heat oil over medium high heat. Add onions, red and green peppers, and garlic; stir to coat with oil. Cover, reduce heat to medium, and cook for 5 minutes. Stir squash into vegetables. Stir in salsa, cumin, and salt. Cover, and cook for 5 minutes.

       3. Spoon vegetable mixture evenly down the centers of warm tortillas, and sprinkle with cheese and cilantro. Roll up tortillas, and serve.

  4. sauteed and slightly fried eggplant, roasted garlic on baguette slices, pita bread and roasted red pepper hummus, any amy's frozen dinner, pesto with chopped pine nuts on penne, sesame noodles, basically any asian-style vegetable stir-fry on rice, steamed vegetables, fresh fruit, crackers, fajitas, baked potatoes, homemade tacos/burritos with lots of beans and salsa. anything really goes. i think i named all vegan things since i'm vegan but whatever.

  5. so yesterday... i discovered falafels.  their these meatball shaped things (minus the meat)  made out of like herbs and chickpeas.  THEY'RE AMAZING.  you put them on a wrap with all your other ingredients (lettuce, cheese, tomatoe, onion etc..) and wrap it up and eat, their delicious!

  6. Pastas are fantasic and easy.

    Quiche is really nice if you eat dairy

    Burrtios with tofu or beans or without a meat supplement at all.

    There's so many.
