Question:

Easy to make, healthy, vegetarian lunch?

I want to make myself a healthy, vegetarian lunch today. I have all the generals, and just so you know, I'm not quite fond of tomatoes. SO, does anybody have a yummy meal that I can make? PLease post the recipe!!

  1. Hummus pita!!

    Take a whole grain pita, spread hummus on it.  Layer alf-alfa sprouts, avacado, cucumbers, lettuce, green peppers, onions, and any other veggies you dig.  

    or...

    Pasta!

    I like to toss whole-grain pasta with green peppers, mushrooms, black olives, olive oil, italian seasoning, and garlic.

  2. Check out the Vegan Lunchbox.  There's also a cookbook based on the blog.  But it's a SAHM who creates tasty, clever vegan lunches for her son.

  3. My personal favorite: Cucumber & Tomato Sammiches

    Ingredients: Cucumber, Tomato, Munster or Rice cheese, Mayo or Vegenaise, Wheat bread or Potato bread.

    Grab your tomato and cucumber, wash em and slice em to desired thickness. Take out your bread, toast it if you like, and slap your mayo or vegan equivalent on the bread. Next, layer the cheese, tomato, and cucumber. Feel free to spice to your liking before closing the deal. I like to use lemon pepper out of a grinder, but just salt and pepper should do just fine. I eat them two at a time :D

    I gave alternate options vegan viewers.

    Edit: I forgot to add that my wife hates tomatoes, but loved the combination.

  4. grill sliced portabello mushrooms with onions and sweet peppers and put on a grilled garlic buttered bun.

    3 pieces of wheat bread (or any other)

    spinach leaves

    red onion slices

    avocado 1/2 sliced

    English cucumber slices

    (omit since you don't like )tomato slices

    cream cheese (vegetable, plain or light) If vegan use Tofutti

    Red or yellow pepper.

  7. Take a can of chickpeas and mash them up a bit.  Not into a paste just smaller than their usual selves.  Add three or four heaping tablespoons of Veganase, some diced onion and diced red bell pepper.  Mix well and spread onto tasty whole grain bread with some lettuce to make a mock tuna salad sandwich.  This stuff is delicious and it only takes 15 minutes to make.  It makes enough for two or three sandwiches.

    Rub cream cheese on bread slices add spinach and red onion, add another slice of bread , add avocado and cucumber,peppers, tomatoes(omit ) Slice sadwich in half

    and place toothpicks to hold sandwich
