  1. This is the basic sauce for greek food:

    Tzatziki

    1 cucumber, seeded and diced

    1/4 red onion, diced, about 2 tablespoons

    1 clove garlic, chopped

    2 cups plain nonfat yogurt

    1 teaspoon lemon zest

    1 tablespoon lemon juice

    2 teaspoons salt

    Freshly ground black pepper

    Pita wedges, served on the side

    Put the cucumber, red onion and garlic in the bowl of a food processor and pulse until minced.

    Put the yogurt into a mixing bowl. Add the cucumber mixture, the lemon zest and juice, salt and red pepper flakes and mix with a rubber spatula until well combined. Transfer to a decorative bowl and serve with pita wedges.

    *note: if you want the yogurt more greek like, you can strain it through a cheese cloth to make it thicker

    **Greek Salad Recipe**

    3 tablespoons extra virgin olive oil

    1½ tablespoons lemon juice

    1 clove garlic—minced (crushed)

    ½ teaspoon dried oregano

    ¼ teaspoon sea salt

    ¼ teaspoon freshly ground black pepper, and extra for garnish

    3 tomatoes—cut into wedges

    ¼ red onion—sliced into rings

    ½ cucumber—sliced into thick half-moons

    ½ green pepper (capsicum)—julienned

    4 oz (120g) feta cheese—cut into small cubes

    16 kalamata olives

    PLACE the olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a s***w-top lid and shake to combine. PLACE the salad ingredients in a large bowl. POUR the dressing over the salad and toss gently to combine just before serving. Garnish the Greek salad with a little freshly ground black pepper.

    you can grill some chicken and put this sauce in some pita and put the greek salad in it. it's delicious!

  3. HOT PEPPER CHEESE DIP (Very Greek!)

    A specialty of the region of Thrace in northeastern Greece, this dip is served all over Greece - in varying degrees of heat. My family likes this one hot, so I use jalapeno peppers that make my eyes water just from touching them. This recipe works with red and green peppers. Mild or hot, this is a delicious dip.

    Prep Time: 15 minutes

    Ingredients:

        * 1/2 pound of feta cheese

        * 1 pepper (mild to hot, depending on preference)

        * olive oil

    Preparation:

    Crumble the feta into small pieces using a fork.

    Sauté the pepper in 2 tablespoons of olive oil until the skin is lightly browned. Remove the stem and discard, and chop the pepper into very small pieces. Using a mortar and pestle, add the pepper and the oil it was sautéed in to the cheese and mash until smooth, adding additional olive oil if needed to bring it to the consistency of a thick (but not stiff) dip. Serve garnished with a bit of parsley.

    Alternatively: Put the cheese, pepper, and oil from sautéeing in the blender and mix, adding more olive oil if needed to bring to the correct consistency.
