Easy vegetarian meal ideas for someone who doesn't cook very well?

I'm not really good with recipes with too many details, but any ideas would be appreciated!

  2. Give us some more detail, what kind of food do you like/dislike? Do you like the meat replacement products, if so there are an endless amount of quick, easy recipes for us 'cooking challenged'. Here is an easy, cheap meal I make with Boca Grounds: 2 bags of Boca grounds (three come per box), 1 finely chopped onion, 1 family size can of Sloppy Joe mix (I use Manwich). Mix these ingredients together, throw them on some hamburger buns and...you have vegetarian sloppy Joe's. (My non-vegetarian husband will even eat these, try it)!

  3. 3 cups vegetable broth

    3/4 cup lentils, uncooked

    1/2 cup brown rice, uncooked

    2/3 cup chopped onion

    2-3 medium carrots, chopped

    1/2 tsp basil

    1/4 tsp oregano

    1/4 tsp thyme

    1-2 clove garlic (optional)

    salt (optional)

    Mix ingredients in a casserole dish. Bake covered for 1½ hours at 300F.

Hi, try a veggie cottage pie, fry onions, mushrooms,bell peppers,courgettes, add a tin of tomatoes and red kidney beans, make up a small cup of veggie gravy and add. cook potatoes until soft, mash with butter, salt and pepper. Put veggie mix in dish, spread mashed potato over top, add cheese if you wish and put in oven for 20 minutes. Easy to freeze as well.

    veggie curry- cook mushrooms, cauliflower,broccoli, green beans, asparagus, add a tin of tomatoes and curry powder to taste,and thicken with veggie gravy granules. and serve with rice.

    Pasta dish-fry garlic, onions, mushrooms, mixed bell peppers, courgettes, add a tin of chopped tomatoes and mixed Mediterranean herbs and simmer, meanwhile cook pasta, drain and add sauce.

    BAKED MUSHROOMS FILLED WITH SPINACH, BRIE AND WALNUTS

    Serves 4

    Ingredients:

    4 field or portabello mushrooms, wiped and stalks removed

    45ml/3tbsp olive oil

    225g/8oz baby leaf spinach

    40g/1 ½ oz walnuts, chopped

    100g/4oz vegetarian Brie (or Blue Stilton), cut into small pieces

    to taste salt and black pepper

    to serve mixed salad leaves.

    Method:

    1. Heat the oil in a frying pan and fry the mushrooms on both sides until tender. Remove and place in a greased ovenproof dish in a single layer.

    2. Wash the spinach and cook quickly in the water remaining on the leaves until wilted. Drain well and use to top each of the mushrooms.

    3. Mix the walnuts and Brie together in a bowl and season well. Top the mushrooms with the mixture and place in a preheated oven (190/375/Gas 5) or under the grill and cook until the cheese is bubbling and golden.

    4. Serve on a bed of mixed salad leaves and tomatoes.
