I plan on catching some nice reds and wanted to know if they are considered decent table-fare? I have a gas BBQ grill at home i plan to use.

  1. Grilled Redfish on the Halfshell makes wonderful table fare. Begin by filleting your fish so that you leave the scales on. Freeze them in water to avoid freezer burn if you don't plan on grilling them right away.

When ready to grill, wash thoroughly and season lightly. I prefer cracked black pepper and a pinch of salt. Next, place fillets scale side down on you grill and set to low heat. Cook for 10-12 minutes or until the meat flakes off. I have topped these with mozzarella cheese and french fried onions for a terrific feast.

I have also had a friend top them with pico de gallo type salsa. Either way, they don't require much and best of all, you eat the meat right off the scales. You'll impress your friends and everyone will agree redfish are delicous.

Try grilled corn-on-the-cob and home made cole slaw as sides. Enjoy!
