Eating out in Brighton or nearby.?

Question

Am quitting my job on 28 August to go to greener pastures. A colleague has offered to take me out for a farewell meal in Brighton. I like vegetarian food, although I am by no means a strict vegetarian. However, where would you recommend that offers much more than the usual two vegetarian options?

Jenkin, it is a shame I am in Mexico, in other way I could cook for you.

MY mother knows many vegetarian receipes becasue she just to practice YOGA...So , I can tell you there it is places that have many different food for vegetarians, even hamburgers...
