Egg Drop or Egg Flower Soup?

I am going to attempt this tonite, do you use the whole egg or just the egg whites?

  1. The eggs should be beaten (yolk and whites) together.

    Beat with a fork or chopsticks rapidly.

    Just before the boiling hot soup is ready to serve, pour in the egg mixture and blend into the soup with a fork or chopsticks. As soon as you see the "egg flowers" appear, turn off the heat, however, continue stirring for a minute or two.

    If you let it sit too long, the egg will get over cooked and form into clumps.

    For health or diet watchers, you can omit the yolks and use only the whites, using these same methods.

    draw off several cups of clear broth

    bring back to a slow boil

    separate the yokes

    mix each separately

    swirl the almost boiling broth,, and add each slowly

    add the broth and eggs back to the soup..

    that is how I think it is done never tried it my self..
