Egg substitute?

so i need something to replace egg in this potatoe salad recipe. its the only non vegan part in the recipe. if you know anything i could use please tell me

  1. If the egg is only used to make mayonnaise for the potato salad, there's plenty of recipes for eggless mayonnaise made with soy milk in the web.

  4. just omit the egg all together.  I just use celery and onion in mine sometimes and it still taste good.

  5. Many possiblities -- the trouble is finding something that's the right consistency.

  6. I prefer to use Ener-G Egg replacer (http://www.ener-g.com/) in most of my recipes that call for eggs. However, depending on the food/recipe, different subsitutes may be more appropriate. My vegan starter kit lists these as subs for 1 egg:

    1 tbsp. cornstarch + 2 tbsp water or

    1 ounce mashed tofu or

    1 tbsp. ground flax seeds = 3 tbsp. water or

    1/2 banana
