  5. Well, I used buttermilk instead of eggs, in the same proportion. It will be really spongy. and thats right, use the normal flour not the self raising floor. Use a little more baking powder than you usually do. :)

    Homespun Ivory Cake

    2 1/4 cups all-purpose white flour

    2 1/2 tsp Ener-G baking soda

    1/2 tsp salt

    2 tsp Ener-G egg replacer

    3/4 c soy milk

    1/2 c soft soy margarine

1 3/4 c Florida Crystals Milled Cane Sugar

    1 1/2 tsp natural vanilla

In a medium bowl or measuring cup, combine flour, baking soda, and salt: set aside.

In a separate bowl, mix egg replacer and 1/4 c water; set aside.

In another bowl, mix soy milk and 1/2 c water; set aside.

In a large mixing bowl, beat margarine with electric mixer until creamy. Gradually add sugar until well creamed.  Beat in vanilla. Add mixed dry ingredients alternately with the soy milk mixture and egg replacer mixture, beating after each addition. ( Begin and end with the dry ingredients) Pour batter into two 8 inch round cake pans that have been sprayed with a nonstick cooking spray and lightly floured.  Bake at 375 degrees for 30 to 35 minutes, or until wooden pick or knife inserted comes out clean.

Top with favorite frosting or fresh fruit.

  8. I make this one, sometimes I add cherries or sultanas or both! :) And I use a mug as a measure!

    1 cup of soya milk

1 cup of unrefined brown sugar

1 cup of self raising flour

    1 cup of coconut

    1 teaspoon of baking powder

Mix all together until all the ingredients are well mixed, pour into a loaf tin or 2 sandwich tins(greased) and bake on electric 160 for about 25 minutes.

You could use blackcurrant juice to colour your icing or maybe orange juice.

  9. I found this website on Google:

    Hope it helps. Happy tasting!
