How possible is it to add electronic stability control to a used vehicle? And about how much would it cost?

Not possible.

ESC is basically very smart brakes that is coupled to motion sensors that detects the car is about to lose control and apply just enough brakes to bring it back under control. It's specific to the model and usually only on higher end models. It's NOT a retrofit item.
