Engine Knock 2000 Toyota Camry?

Question

OK So my girlfriend's car suddenly developed this loud knock during acceleration over 2000 rpms. I checked her oil and, sure enough, dry as a bone. I refilled and gave it time to filter through but the knock persists. Could this be due to low gas causing pre-firing or has she done some damage?

Sorry to be the bearer of bad news, but it doesn't sound good. It's likely she's hurt a rod bearing.

When she gets the motor repaired/replaced or gets a new car, it might be a good idea to review all those lights on the dash.

check the antifreeze she may have blown the head gasket but she likely blew a seal and or burned up the head altogether

Yes, The engine is damaged seriously. When you run an engine with out oil or even low it will damage the rod bearings and the crankshaft. No oil or low oil will  not lubricate the movable parts inside the engine and cause them to get hot and melt. The cheapest way would be to go to a wrecking yard and get a good used engine and have it replaced.  Also you can get a rebuilt engine. Trying to rebuild this one will be costly and have to replace major parts. Crank shaft or have it machined, all the bearings rod bearings, main bearings, cam bushings, lifters, maybe pistons, rings, oil pump, timing chain  and if you go for this the cylinder heads and valves need to be machined good luck
