Entertaining Guests. What Should I Do For Nibbles?

Im entertaining guests this Saturday and I always get stuck on what nibbles and food to buy and prepare that they will like. I usually do ready made chicken tikka pieces, dips with pringles and tortillas, garlic bread, spring rolls and maybe some pizza slices. So does anyone have any other ideas and where to get it from. Im looking for quick and simple and cheerful. Thanks.

  1. you can do small chicken drumsticks, falafel balls with humus, sushi mini quiches and you can check marks and spencers they are quite good in finger foods.


  2. definitely a veggie/dip platter and a fruit platter ..... maybe a tray with different cookies, brownies, petit fours

  3. I like to use dips...veggie dips with fresh veggies.  Spinach dip with bagel chips or fruit dip and fresh fruit.  YUMMY

  4. BUFFALO CHICKEN DIP!

    super easy... i take it to any party i go to!

    3 lg cans of white meat chicken

    1 bottle of franks red hot

    1 package of sour cream

    2 cups shredded cheddar

    (bleu cheese or ranch dressing cools it down if you don't like it so spicy... the more you add, the creamier it is)

    -mix all ingredients, but leave 1 cup of cheddar to sprinkle on top

    -spread in pie pan or small baking dish

    -sprinkle 1 cup of cheddar on top

    -bake at 350 for 1/2 hour

    use tortilla chips or pita to dip

  5. BUFFALO-STYLE CHICKEN WINGS

    Serves approx 6

    Ingredients:

    4cups all-purpose flour

    1 teaspoon fine salt

    1 teaspoon cayenne

    Vegetable oil for frying

    5pounds chicken wings, split at the joint, wingtips removed and discarded

    1 cup unsalted butter, melted

    4 tablespoons freshly squeezed lemon juice

    1/2 cup hot sauce, or to taste

    Blue Cheese Dressing, recipe follows

    Celery sticks

    Preheat the oven to 400 degrees F.

    In a large bowl, whisk together the flour, salt, and cayenne.

    In a large heavy-bottomed pot, pour in the oil to a depth of 2 inches. Place over medium heat and heat until a deep-fry thermometer inserted in the oil registers 375 degrees F. Working in 3 batches, dredge the wings in the flour mixture and fry until lightly browned, about 10 to 12 minutes per batch. Using a slotted spoon, transfer the wings to a paper towel-lined plate. (Make sure the oil returns to the proper temperature before frying each batch.)

    In a large bowl, combine the butter, lemon juice, and hot sauce. Toss the fried wings in the hot sauce mixture. Transfer the wings, with the sauce, to a large foil-lined baking sheet, or 2 small ones, and bake, turning the wings occasionally, until crispy and they have absorbed most of the sauce, about 35 minutes.

    Transfer the wings to a serving platter and serve with the blue cheese dressing and celery sticks.

    BLUE CHEESE DRESSING

    2 cup mayonnaise

    1 cup crumbled Maytag blue cheese (about 3 ounces), divided

    1 cup half-and-half

    4 tablespoons sour cream

    2 tablespoon freshly squeezed lemon juice

    1/2 teaspoon Worcestershire sauce

    1 teaspoon kosher salt

    Freshly ground black pepper

    In a medium bowl, whisk together the mayonnaise, 1/2 cup of the blue cheese, half-and-half, sour cream, lemon juice, Worcestershire, and salt, until smooth. Gently stir in the remaining 1/2 cup of blue cheese and season with pepper, to taste. Use now or store in the refrigerator for up to 3 days.

    Yield: 4 1/2 cups

    CRAB RANGOONS

    1 pkg. won ton wraps

    1 pkg. cream cheese

    1 c. sour cream

    1 clove chopped garlic

    3/4 lb. Sea Sticks (imitation crab meat)

    1 green onion with tops

    Pepper and lemon juice to taste

    Deep fry.

    TIP: Mix egg white together, dip your finger in it, rub on the wrap to hold before deep frying.

    CHEESIEST FRIED CHICKEN EMPANADAS WITH CHILI CON QUESTO DIP

    Yield:  12 to 15 servings

    3 cups chopped, cooked chicken, about 4 to 5 chicken b*****s

    1 (8-ounce) package shredded colby and Monterey Jack cheese blend

    4 ounces cream cheese, softened

    1 chopped red bell pepper

    1 jalapeno, seeded and chopped

    1 tablespoon ground cumin

    1 1/2 teaspoons salt

    1/2 teaspoon ground black pepper

    1 (15-ounce) package refrigerated pie crusts

    Water

    Preheat vegetable oil in a deep-fryer to 350 degrees F.

    In a large bowl using a rubber spatula, combine the chicken, colby and Monterey cheese, cream cheese, red pepper, jalapeno, cumin, salt, and pepper. Remove 1 pie crust from pie tin onto a lightly floured surface and roll into a 15-inch circle. Cut out rounds, using a 3-inch cookie cutter. Re-roll dough as needed. Repeat procedure with remaining pie crusts, making 12 to 15 circles total. Arrange 1 round on a clean, flat surface. Using a pastry brush, lightly brush the edges of crust with water. Place 1 heaping teaspoon of chicken mixture in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal. Repeat with the remaining rounds and chicken mixture. Place empanadas in deep-fryer for 3 to 5 minutes or until golden brown. Top with con queso dip.

    Note: Up to this point, the recipe can be made ahead and frozen for up to 1 month

    CHILI CON QUESTO DIP

    1 pound package Cheddar (recommended: Velveeta)

    1 (16-ounce) can diced tomatoes, drained

    1 (4-ounce) can diced green chiles

    2 teaspoons hot sauce

    In a medium sauce pot, slowly melt Cheddar over medium/low heat. When cheese is fully melted add tomatoes, chiles, and hot sauce, stirring with spoon until combined well.

    Pour cheese dip into a small casserole dish and serve as a dip for the cheesy empanadas or pour on top for a real cheesy effect.

    MOZZARELLA STICKS

    makes about 56 pieces

    1 1/2 cups Italian-style dried breadcrumbs

    1 1/3 cups freshly grated Parmesan

    1 teaspoon salt

    2 (16-ounce) blocks pasteurized mozzarella cut into 4 by 1/2-inch sticks

    4 large eggs, beaten to blend

    1 1/2 cups vegetable oil

    4 cups Marinara Sauce, recipe follows

    Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.

    Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.

    MARINARA SAUCE:

    Yield: 2 quarts

    1/2 cup extra-virgin olive oil

    2 small onions, finely chopped

    2 garlic cloves, finely chopped

    2 stalks celery, finely chopped

    2 carrots, peeled and finely chopped

    1/2 teaspoon sea salt, plus more to taste

    1/2 teaspoon freshly ground black pepper, plus more to taste

    2 (32 ounce) cans crushed tomatoes

    2 dried bay leaves

    In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

    Cut each crescent roll square into 4 pieces, wrap around sausage, cook according to crescent roll package directions. Serve with dipping sauces such as mustard, ketchup, sweet & sour sauce or whatever you like.

  6. Try dry cat food in a bowl. I've tried it and it is tasty. Your quests will never know as long as you hid the box!

  7. different types of crackers + different types of cheese are nice. you can put grapes next to them. you could also serve olives (make sure you have enough toothpicks or something to eat them with).

  8. Hummus get a tub from m&s and serve with strips of pitta bread to dip into or breadsticks

    Cherry tomatoes, hollowed out and stuffed with a wee cube of mozarella

    Smoked salmon on brown bread with a little sliver of pink grapefruit

    And as a variation on the normal... instead of tortillas and pringles, serve breadsticks with your dips.

  10. M & S do a rather nice 'wheel' of prepared crudites with sour cream and chive dip, or you could make your own crudites by simply washing and peeling raw vegetables. Peanuts, pringles, pretzels, the possibilities are endless.........

    Awesome Dip for apples:

    Spread cream cheese on a bid plate. Drizzle warm caramel over it. sprinkle w/ crushed butterfinger! dip apple slices in it!

    I have a great recipe for personal pan pizzas! Use large "Grands". (biscuits) Smash them (raw) w/ a cup, leaving an edge for your crust. Add sauce, cheese, and other toppings. Then bake! Quick, easy, and delicious!

    Make your own sundaes! Ice cream, cherries, banana, strawberries, oreo, sprinkles, hot fudge, nuts, caramel!

    Milk and cookies!

    Banana ice — Peel several very ripe bananas, break them into 1-inch pieces, and freeze the pieces in a sealed plastic bag. Just before serving, whirl the pieces in the blender with a small amount of water or juice. Serve right away. Add berries for a different flavor or top with fruit or nuts.

    Healthy ice pops — Freeze fresh, unsweetened 100% juice in ice pop molds or ice cube trays.

    pita and hummus — Warm a pita in the oven on low, then cut it into small triangles. Dip it in a tasty, low-fat hummus. Hummus is available in yummy flavors like garlic and spicy red pepper.
