  2. Generally they would fall into the category of food crops, medicinal crops, or aesthetic products. They are a great niche crop item if one has a market for it, but without a market one might have a problem unloading a ton of oregano. If one is in a farmers market a wide selection would probably be alright but not a single crop. It is probably better to have a buyer for a bulk item and the buyer will tell you that they need 50 pounds of basil tops every Tuesday and Friday, or ginseng root in 20 pound crates can be picked up if you have a minimum of 50 crates or you can drop it off. You may get a good sale to garden centers for flats of 4" assorted herbs/ spices in the early spring, with later sales pending if the product does well and is of good quality (that all depends on your greenhouse, the management techniques and how warm you keep it $$$). It is possible to get a good deal on the production of a medicinal plant but that kind of arrangement is dependent on where the company is, where you are, your capability, etc.
