Estancias in Argentina?

My wife and I are planning to vacation in Argentina in January or February and I would like to stay in an estancia on the Pampa for around two days/three nites. Should I reserve here, or can I go to an agency in Buenos Aires? Will it be less expensive to do so?I speak Spanish pretty well so language is not an issue. Any tips?

The only Estancia I've been (as a tourist) is Estancia Santa Susana which cater for people fduring the day with a huge asado and a gaucho show and good wine. I would definetly check Lonely Planet, Fodor's guide to see what they offer and ultilmately look for argentinian tourist web sites which could offer lodging in the Pampas estancias.
