  1. sucrose hydrolyzes to glucose & fructose:

    C12H22O11 & H2O --> 2 C6H12O6

    withe yeast &/or bacteria, the glucose & fructose  both ferment:

    2C6H12O6 → 4 C2H5OH + 4 CO2
