Ever cooked perch?

Has anyone out there ever cooked yellow perch? I live on a pond that has many yellow perch and one oldtimer told me he loves to catch the perch and eat them, Can anyone give me an idea how to cook them and what do you do with the skin, these fish are very scaley. Do you skin them first?

  1. You scrape the scales and gut and dehead, rinse and hold in cold salt water till you are ready to fry. Take a paper bag and put 1/2 and 1/2 flour and cornmeal and salt/pepper. Marinate the fish in some mustard and tabasco, then shake in the flour/cornmeal and deep fry in hot oil YUM!

    Get someone to teach you how to clean your fish. Not the easiest thing to teach yourself.
