Well here is a compiled list of all UFC champions who they beat to get the title and who they fought once they had the title so its champions only

For me its got to be ultimately Rickson Gracie( in his prime) even though he was mainly Pride based.

UFC the greatest was Royce Gracie ( ufc1 ) as it was an open weight contest NHB and as real as it got to real fighting.

Once the weight divisions and mega rules appeared as to turn ufc into a sport  through health and safety and too much ref involvement. Then I'd choose.....

Just go to ufc.com they have every fighter that has ever fought in the ufc there.  One of the best and my favorite is Rich "ACE" Franklin  he is an amazing fighter and really great person.
