To be honest, anything with length would be too difficult. I have seen a lot of books acted out with preschool...for example The Very Hungry Caterpillar. Each child took a page from the book and recited it and acted out the caterpillar eating the items on that page.

Good old fashioned fingerplays would work also. What ever you choose, you will need to make sure to add some sort of movement, action, or picture to it to help the children remember lines if you're not using a fingerplay, etc.
