  1. Because, the seed has started the process that would normally feed the new plant; instead of the nutrients going to the growing process, they are digested by the person eating the sprout.

    Sprouted seeds are very nutritious. They are a source of B vitamins (such as niacin), zinc, iron, calcium, magnesium, potassium and other essential nutrients.

    Try to incorporate them into your diet. I like alfalfa sprouts & hummus on wholemeal bread. They're surprisingly tasty.
