Explain the term phase as it relates to homogeneous and heterogeneous mixtures.?

Homogeneous mixtures have one phase and heterogeneous mixtures have two or more. From the famous example of oil mixing with water, oil ends of floating on top, creating an uneven mixture. Another way to think of it is that homogenous means evenly mixed.
