  1. "Cassoulet" made with beans, duck and Saucisse de Toulouse. (recipe...in French...http://www.toulouse-renaissance.net/cuis...

"Croquant" (biscuits made with almonds and caramelized sugar) and "curbelet" (thin crust biscuits) of Cordes.

"Gâteau à la broche":cake that is cooked on a spit, rotated round and round forming ring layers.

Gimblette of Albi: a crown shaped small pastry.

Navette of Albi: Biscuits with dried fruits and almonds.

Petit janot: very dry cake with a licorice taste.

  2. toll house...cookies?

  3. Cassoulet is not easy to make and not readily available outside of France, because it contains duck or goose confit (which is not all that difficult to make but is time-consuming).  If you can find Toulouse sausages, you can eat those with some Puy lentils (Puy is actually in the Auvergne, but not terribly far from Toulouse).

For other recipes I would suggest you look on the internet, and put in the key word "Toulousienne".

  4. Cassoulet!!!
