  1. I am very fond of the marche de la rue Monge, also there is a (rip off) organic market on Bld Raspail Sundays see below link to adresses and dates/times of Paris markets, a good indication of qaulity will be the size of a queue in front of a stall

If you are looking for the professional farmer markets you need to go to Rungis around 4 or 5 am but I believe it is open to professionals only.

One of the best butchers in Paris is - he knows everything about meat and the quality is remarquable

one of my favourite cheesemongers : Marie-Anne  Cantin rue du Champs de Mars Paris 7 near the Eiffel Tower and ecole militaire, she has her own cave d'affinage so cheese is always perfect . She can vacum warp it and I fly back to the US with masses of her cheese

  2. If you like farmers' markets, they're there.  They're all over the country, even in the smaller towns.

  3. Streets markets are a fixture of Parisian life. There is one in every arrondissement. These are not Farmer's markets in the sense of the actual producer of the products selling. That can be found outside the big cities,

The one closest to my usual hotel is on the rue Buci and has been operating there since the middle ages.
