  1. An easy chocolate cake for snack or desserts.

    Prep Time: 7 minutes

    Cook Time: 40 minutes

    Ingredients:

    3/4 cup sugar

    1 cup unsifted all-purpose flour

    2 teaspoons baking powder

    1/2 teaspoon salt

    2 squares unsweetened chocolate

    2 tablespoons butter

    1/2 cup milk

    1 teaspoon vanilla extract

    --

    TOPPING

    1/2 cup sugar

    1/2 cup packed brown sugar

    1 tablespoon unsweetened cocoa powder

    3/4 cup boiling water

    Preparation:

    Directions for chocolate cake

    Grease and flour an 8x8-inch square baking pan. Mix sugar, flour, baking powder and salt together. Melt chocolate with butter. Stir chocolate mixture with dry ingredients along with milk and vanilla; beat until smooth. Spoon chocolate cake batter into prepared pan. For topping, combine sugar, brown sugar and cocoa; sprinkle evenly over batter, Pour boiling water over all. Bake in a preheated 350° oven for 35 to 45 minutes. Cool in pan on a wire rack. Invert chocolate cake onto cake plate so cake makes its own chocolate topping. Serve chocolate cake warm or cold.

    Chocolate Upside-Down Cake

    1 cup packed light brown sugar

    1/2 cup baking cocoa

    2 cups water

    12 to 14 marshmallows, quartered

    1 (2-layer) package chocolate cake mix

    1/2 cup chopped walnuts

    Preheat oven to 350° F.

    Combine brown sugar, cocoa, water & marshmallows in greased 9 x 13 inch pan. Mix well.

    Prepare cake mix using package instructions. Spoon over brown sugar mixture. Sprinkle with walnuts. Bake at 350° F. for 25 to 30 minutes or until cake tests done.

    Cool in pan. Invert to serve. Serve with whipped cream or ice cream.

  2. I'll site my source and also admit, I've never tried this recipe but I've had great luck with every recipe I have tried from this site, especially their cakes.

    Rose writes: "This is VERY RICH. The frosting goes through the cake and ends up on the bottom of the pan. My thoughts are that's why the cake has the flavor it does. Cut the pieces and scoop the frosting off the bottom, or turn the pan upside down on a board. I have never done this, I just scooped the frosting from the bottom of the pan. I'm still experimenting."

    INGREDIENTS

        * 1 cup flaked coconut

        * 1 cup chopped pecans

        * 1 package German chocolate cake mix

        * 1-1/4 cup water

        * 1/3 cup oil

        * 3 eggs

        * 3/4 to 1 cup chocolate chips

        * 3-1/2 cups (about 1-pound) powdered sugar

        * 1 cup margarine, melted

        * 8 ounce package cream cheese, softened

    Cake Batter: Preheat oven to 375° F. Grease 13 x 9-inch pan. Sprinkle coconut and pecans evenly over bottom of greased pan. In large bowl combine cake mix, oil, water and eggs at a low speed until moistened. Beat 2 minutes at high speed. Stir in the chocolate chips. Spoon batter evenly over coconut and pecans.

    Frosting: In another large bowl combine powdered sugar, margarine and cream cheese; beat until smooth and creamy. Spoon evenly over batter to within 1 inch of edges. Bake at 375° F for 40 to 50 minutes or until toothpick comes out clean. Cool the cake slightly, about 5 minutes. You can either cut into squares and scoop the frosting off the bottom, or turn the entire pan upside down on a board and spread the top of the cake with any frosting that might remain in the pan.
