TUNA CHOW MEIN CASSEROLE

1 tbsp. butter

1/4 c. chopped onion

1/2 (5 1/2 oz.) can chow mein noodles

1 c. (6 1/2 oz.) tuna, drained

1 can cream of mushroom soup

1/4 c. milk

1/4 c. water

1/8 tsp. pepper

1 c. cut-up celery

2 tbsp. chopped green pepper

Melt butter in large skillet, add celery, onion and green pepper; cook and stir until onion is tender. Reserve 1/4 cup chow mein noodles; stir in remaining ingredients. Pour in ungreased 1 1/2 quart casserole. Sprinkle reserved chow mein noodles over top. Bake uncovered 30 minutes. Makes 4-6 servings.

CHINESE TUNA CASSEROLE

1 can mushroom soup

1/4 c. water

1 can chow mein noodles

1 can tuna

1 c. diced celery

1/2 c. cashews

1/4 c. diced onion

Dash of pepper

Combine mushroom soup and water in ungreased casserole dish. Stir in 1 cup chow mein noodles and remaining ingredients. Top with remaining noodles. Bake at 375 degrees for 25 minutes.

Ya know what I really like to do?  Make a box of Mac and Cheese, add in a can of Cream of Mushroom Soup and a drained can of tuna. Top it off with lots of pepper.

Memories of cheap college food, but yum.
