Favorite Vegan Recipes?

I'm a vegetarian, but I have a lot of vegan and vegetarian friends, and I want to have some of them over for a meal. And I'm looking for some good vegan recipes, I found some, but I really dont know if they even taste good. So I figured I can ask on here.

So what is your Favorite Vegan Recipe? Please post the entire recipe.

And also, how can you make Vegan-Friendly cupcakes from box-cake. What do you use to substitute the eggs? I've heard of bananas, diet coke, or egg substitute, what in your opinion works best?

I look forward to seeing all the replies!

PS: Don't just come on here and say how dumb it is to not eat meat, you just sound ignorant and close minded.

  2. Actually all vegetarians sound close minded to me about their eating habits when they talk, us omnivores are the most open minded.

    Heres a recipe

    Weight Watchers Splenda Baked Apples

    SERVES 6 (change servings and units)

    Change to: Servings US Metric Close

    Ingredients

        * 6 granny smith apples

        * 1 cup Splenda granular, sugar substitute

        * 1 teaspoon cinnamon

        * 1 tablespoon margarine

    Directions

       1.

          Preheat oven to 350 degrees.

          Wash and core apples using an apple corer. Place slices in a shallow baking dish.

          Mix splenda and cinnamon in small bowl. Sprinkle over apples.

          Place small dots of margarine over the apples.

          Cover with foil and bake for 35-45 minutes, until a little soft.

    1cup hazelnutbutter

    1/2cup sugar

    1tbs vanilla

    pinch of cinnamon

    MIX AND REFRIGERATE

    Yum Yum Brownie Muffins

    (1 Muffin, or 3 minis - 181 calories, 3.5g fat, 37g carbs, 2g, fiber, 2g protein - 4 WW points)

    This super-simple 2-ingredient recipe is a Weight Watchers Fave!

    1 box devil’s food cake mix

    1 can solid pack pumpkin (15 oz.)

    Directions:

    Mix the two ingredients together. Don't add anything else that may be mentioned on the box, such as eggs, oil, or water. The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. DO NOT DO THIS AS IT WILL RUIN EVERYTHING! Place batter into muffin tins (or mini muffin tins) lined with paper, or sprayed with non-stick spray. Bake at 400 degrees for 20 minutes. Makes 12 regular or 36 mini muffins.


  5. Here's a cake recipe--don't use bananas, diet coke(?) or egg replacer.  So easy and so good.  No chemicals!

    1 1/2 cup flour

    1/3 cup cocoa powder

    1 tsp b. soda

    1/2 tsp salt

    1 cup sugar

    Mix, add

    1 1/4 cup liquid (water, soy milk, I use coconut milk for more richness)

    1/4 cup veg oil

    2 tsp vanilla extract

    2 tbl vinegar (optional)

    Mix

    Bake at 350 for 25 to 30 minutes.  So good, so easy.  

  6. These are my tried and true family recipes that I cook every week.  I hope they are helpful.  I won't give you a link to a website, I have only given you what I KNOW is good:)

    Vegan Pizza

    Ingredients:  Pillsbury canned pizza crust, your favorite kind of pizza sauce, vegan cheese (I use vegan gourmet-mozzarella flavor), and your choice of toppings...We use vegan pepperoni.

    Spread the crust out onto a greased cookie sheet.  Spoon and spread the amount of pizza sauce that looks right to you.  Then grate the cheese over the pizza.  Evenly distribute the cheese.  Put on the rest of the toppings and bake at 425 for around 12-15 minutes.

    Makes enough for 3-4 hungry people if you are not making any other main courses...

    Vegan Chili and cornbread

    chili-

    Ingredients: 1 can chili magic, 1 large can crushed or petite cut tomatoes, 1 package light life ground...

    Combine all of the above ingredients in a pot and heat until thoroughly hot.  You can leave it on low until the corn bread is done.

    Corn bread-

    Ingredients:  1 pack of Chi chi's corn bread mix, one can of creamed corn, a little soy milk, and a little vegan spread.

    Combine all of the above ingredients and cook according to the directions on package.  To serve, place a couple of spoon fulls of cornbread in a bowl.  Then top with chili...You can add a dollop vegan sour cream too.

    Macaroni and soy cheese

    Ingredients:  1 lb box of your favorite pasta, 1 lb block of cheddar flavored soy cheese, a little soy milk, and a little vegan spread.

    Cook pasta in slightly salted water.  You can add a bit of vegetable to prevent the pasta from sticking together.  

    While pasta is cooking, grate cheese into a small sauce pan and add a tablespoon of vegan spread and about 1/4 cup of soy milk.  Heat sauce pan on high, stirring constantly until mixture is completely melted.

    Drain pasta and pour it into a serving dish.  Pour mixture over pasta and stir until pasta is evenly coated.

    This recipe serves 4.  I serve it beside stewed tomatoes because that's what my family likes.

    Vegan sloppy joes

    ingredients:  1 can of manwich, 1 lb of light life ground, good rolls.

    Just place manwich sauce in a pan with the ground and heat until it is super hot.  Then place it on the buns.  It's really simple.

    To make cakes without eggs, use 2 tbsp of applesauce for each egg you are replacing.  Then use soy milk instead of regular milk.
