  1. you use 1 egg to 2 pieces of matzo. wet the matzo under hot water (this allows the matzo to break easily into pieces that will form the flat shape and get the matzo ready to absorb the egg and give some moisture to it) and crumble it by hand to pieces about the size of a quarter or a nickel. you can allow some bigger pieces and some smaller, but the goal is to smush it down to one pancake like thing in the pan. then beat an egg up with a little bit of milk for volume and toss the crumbled matzo into the beaten egg mixture, making sure that all the pieces of matzo get egg on them and leave it for about 5 minutes to absorb. get your pan heated up and melt some butter into it and then when it's hot slide the matzo egg mix into the pan, flattening it down into a pancake. let it get golden brown on one side (about 3 or 4 minutes) and then flip and get it golden brown on the other side. Slide the brie onto the plate and sprinkle brown sugar over the top, maybe some fruit too. Enjoy the best matzo brie ever.

    3 matzos

    to taste butter

    Directions

    1. beat eggs well and add milk.

    2. season salt and pepper.

    3. Wash the matzos under running water, and break into pieces into the egg mixture.

    4. Melt butter in frying pan, and add to matzo mixture.

    5. Cook over medium heat.

    6. When one side is browned, flip the Matzo Brie over with the help of a plate.

    7. Cook other side for 5- 6 minutes until browned.

    8. Season with salt and pepper to taste.

  3. MATZO BRIE  

    2 eggs

    1/2 tsp salt

    2 tsp. grated onion (optional)

    2 matzos

    Butter or oil for frying

    Beat eggs, salt, and onion together. Put matzo in a collander and pour boiling water over to soften. Crumble matzo into medium sized pieces and mix with eggs. Heat oil in frying pan and add matzo mixture. Fry until lightly browned on both sides.
