Favorite zucchini recipe?

not a big fan of ratatouille or fried zucchini. thanks for your suggestions!

Zucchini Bread

375 g all-purpose flour

6 g salt

5 g baking soda

5 g baking powder

7 g ground cinnamon

3 eggs

235 ml vegetable oil

450 g white sugar

15 ml vanilla extract

225 g grated zucchini

120 g chopped walnuts

Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).

Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.

Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool

i like it sliced and dipped in ranch. ^^ but zucchini bread is delicious too.

zucchini is good sliced and steamed...try putting other squash with it...wonderful recipes can be made with different spics...you can put butter on if it fits ur taste...can be romantic or perfect for a barbecue! think about it!

I like it in an Italian style tomato sauce or similar.  Lightly fried with some onion and garlic and then put it in a tomato sauce to use with spaghetti - or pour some sauce over it and have it as a side dish.

Make some pollenta - maybe a salad - some nice red wine - maybe a nice fruit cup for after wards - - a nice supper.
