Festival cafe experience?

Question

I'm wanting to run a little cafe for a easter weekend festival for 4000 people who have meals provided. I will be one of four cafes selling extra food, especially in the evenings and afternoons. What kind of percentage of people should I be aiming to cater for?

it depends what will be provided in their meals. if its a full meal then maybe 5-10% max. i suggest you concentrate on providing items that are different to the other 3 cafes. hot & cold beverages plus sweets may do the trick.
