Figgy pudding recipe for the oven?

I've googled a basic rich fig pudding recipe, but everyone requires steaming. Does anyone have a recipe that means I can stick the pudding in the oven instead?

  1. Yes, I found at least one recipe that can be cooked in the oven.

I found it with a search for "Figgy pudding oven" on recipe8.com

There is more. Just go to recipe8.com and try that search.

  2. I am a former chef and I have done this many times, all you need is some greaseproof paper or kitchen muslin and some aluminum foil.

Just spread the batter on the paper, if you use muslin soak it in water and brush a bit oil on it, roll it up like a sausage, and then the aluminum foil the same way it will look like a giant christmas cracker.

Place it in the roast pan, add some hot water from the kettle or tap, only half way up, cover and bake for 1 1/2 hours - 2 hours at 325 d F or 150 d C, Gas Mark 2. when done let it cool and then unwrap it, slice it and either serve reheated or store the rest in a container or wrap in cling film for later, I just pop mine in the microwave with a cover it can pop and micro/steam it for 2-3 minutes, and either add the some hard sauce or warm the custard up to for a quick dessert, even freeze the portions individually for a later date.

I am a former chef from Canada and do this at our Christmas time and even before and let it mature for a few weeks to get a bit of flavour.
