First jalapeno harvest?

Question

I picked them early as suggested on the seed packet to encourage more peppers to grow but they taste crummy should I chunk them or will they ripen further in the windowsill?

They will probably shrivel in just a day or two and be even worse tasting. I wait and pick mine when I want to and they just keeping blooming and reproducing.
