Flan: Too much eggs vs. too little eggs?

There are many recipes for flan with variations using 3 eggs to 10 eggs. What would the difference be if I use only a few eggs or a lot of eggs? Texture? Taste? Which is better? etc.

  1. The number of egg yolks will determine how firm the texture of the flan is.  It will also taste richer.  Look to see what the ratio of milk to eggs is -- I prefer the yolkier flan, myself.  Firmer texture and richer flavour.

    But really -- it's all about the caramel!

  2. Size of the finished product.  If the other ingredients have not increased along with the eggs then the texture and taste will be affected.

    Better is trial and error based on your own experience.  I like a smoother creamier texture in my flan.  Less eggs

  3. it's better with less eggs like 3 because it just tastes normal but everyone's opinion is different so just do what you think is best.
