  1. if you used plain flour you should have used a raising agent such as baking powder with it, alternatively you can use self-raising flour. it is really important to have the oven preheated as baked goods need a blast of hot air when they enter the oven to help them to raise. another important thing is to sieve the flour and similar dry ingredients such as baking powder, as air is another raising agent and is needed when baking. good luck!

  2. There could be a whole load of reasons! Right:

    - Your butter could be too soft (half butter and half shortening could help, too)

    - Your cookie sheet could be too warm

    - Chill the dough before you use it

    - If you're using nuts in them, use a bit more of them because this can prevent the cookies from completely spreading out

    - Do not cream the mixture past the point where the butter and sugar is starting to go grainy

    Happy baking!

  3. flat cookies can be caused by a lot of things:

    1) your baking temp was too low

    2) not enough flour

    3) too much sugar

    4) too much leavening

    5) too much liquid

    6) pans over-greased

Also the cookies could flatten out if your pan was hot when you put the dough on it.

Your best bet would be to start over, but if that is not possible, then put your dough in the fridge, move your cookie sheet away from the oven so it cools, make larger cookies, turn your temp up slightly, and watch them carefully after about 8 minutes of cooking so they don't burn.

what is the texture of your dough, anyway?  that might help!

    good luck.
