Question:

Flours for baking/cooking instead of white or wheat flour??

Are flours other than bleached white flour or wheat flour as good when it comes to baking or being used to dredge things when cooking?

I am a convert to veganism for health reasons and am still trying to get my bearings when it comes to new food habits and meals to cook.

  1. Chickpea flour or soy flour are good substitutes.

You can substitute a portion of the white flour with other flours, but not all of it (or it will be hard and resemble a hockey puck:)  ......  You could use ANY flour to dredge things.  Go to a health food store or farmers' market, where the flours are sold in bins.  You'll find soy flour there, along with other varieties.......

    it's actually really good stuff and it's healthier than regular wheats

  4. corn, rye, tapioca or rice flour
