Focaccia bread?help please?

What makes my focaccia bread so hard and i mean like wood and not fluffy.

  1. Have you made it more than once and is always wood?  

    I would say you should "proof" your yeast to make sure it is so good.  That means to add about 1/4 cup water and  1 T sugar (per packet of yeast) to the yeast and make sure that after ten minutes or so, you have bubbles. THen you can add it to your recipe.

    Anyway, if you have good yeast and are not over cooking it . . . I would get a new recipe!


  2. You probably used regular flour, not special bread flour.

    and sifting is important.

    Other than that, could be not enough levening or cooking too long

    possibly in a too hot ovens.

    most ovens do not cook at precisely the temperature you set them to cook.  you might need an oven thermometer - but they are cheap.
