My friend is very allergic to corn but I am interested in making specialty cakes and need to know how to make fondant.

Is there a recipe that does not contain any corn or corn syrup?

  1. You can buy a tub of glucose where cake decorating supplies are sold.  You can substitute the glucose for the corn syrup in your fondant recipe.  Here's a recipe:  http://www.dianasdesserts.com/index.cfm/...

Usually we use corn starch to keep the fondant from sticking when we work with it.  You can use crisco to keep it from sticking, or powdered sugar.

You'll have to be careful what kind of powdered sugar you use too...powdered sugar usually contains corn starch.

  2. I don't really get your connection to the Corn Allergy..

The sugar is an extract and highly refined..

I do not think there are any antigens in the syrup

    BUT

you look here and maybe leave an Email

I suggest you ask your friend

corn syrup is used in too many foods to believe
