Im looking for ideas as to what to cook for my mum at my anniversary meal... im doing a mexican theme.. nacho's taco's etc... but she has been ill and cannot eat "chunky" food.. Can anyone recommend a mexican dish that can be easily swallowed with not much chewing... Im struggling to come up with much and soup is hardly appetising after 2 weeks....

  1. Although not really "authentic", this is a really good cheese enchilada recipe, and it's not "chunky"

    CHEESE ENCHILADAS

    1 very large can enchilada sauce

    1 pkg flour tortillas

    1 container ricotta cheese

    8 oz. shredded Mexican cheese or mozzarella or provolone

    1 small can diced mild chili peppers (drained)

    1 egg

    minced garlic to taste

    salt, pepper to taste

    Mix the cheeses, egg & seasonings together in a bowl.  Put a thin layer of sauce on the bottom of a 9x13" pan.  Lay out all the tortillas and divide the cheese mixture between them.  Roll up the tortillas and pack them into the 9x13" pan.  Cover with remaining sauce.  Cover with foil and bake at 375 for about 35-40 min......


  2. How about some refried beans with cheese and she can eat that with some soft flour tortillas.

    Also, I know she doesn't want soup. But Mexican tortilla soup is yummy!

  3. spicy mince and rice. puree or chop very fine any veg

  4. You can replace meat with Quorn for most dishes. Quorn is soft like mushroom and comes in all shapes and sizes.

  5. how about beans theres not much chewing in them or if i gets to hard maybe ask your mom to change the theme?
