  1. Sprakling Shiraz????????

    Try with a rich choclate/rasberry cake.


  2. Had a night of Syrah/Shiraz tasting/pairing and ended with a Rumball Sparkling Shiraz. From a pairing suggestion on Wine Spectator (I can't access the article - you need to be a member) is this really wonderful, simple and unusual cake:

    Apple Thyme Cake  

    6 tablespoons softened butter

    1/2 cup sugar

    2 eggs

    1 1/2 cups flour

    1/2 cup cornmeal

    2 teaspoons baking powder

    1/2 teaspoon baking soda

    1/4 teaspoon salt

    1/2 cup buttermilk

    2 cups chopped, peeled green apple

    1 tablespoon thyme leaves, lightly chopped

    Whipped cream

    green apple wedges (optional)

    Preheat the oven to 350° F and butter and flour a 9-inch layer cake pan.

    Cream together the butter and sugar, then add the eggs and beat until blended. Combine the flour, cornmeal, baking powder, baking soda and salt, and sift; set aside. Beat the buttermilk into the egg mixture, then fold in the sifted dry ingredients. Fold in the apple and thyme. Scrape the batter into the prepared pan. Bake for about 35 minutes, until a toothpick inserted in the center comes out dry. Cool 5 minutes in pan on rack. Turn out, flip over and cool.

    Serve each wedge with whipped cream on the side. For an optional garnish touch, cut a green apple wedge into crosswise slices with a sharp knife (which minimizes browning) and arrange a few slices next to the whipped cream.
