  1. Some foods like not cooked potatoes will spoil faster if not exposed to air. Other foods like meats will spoil faster if exposed to air.

Hot foods should be allowed to cool before being placed in storage containers. Some frozen foods are better stored in a sealed container while others are better stored in a vacuum. All frozen foods will develop freezer burn faster if exposed to air. Non breaded dark meats are better off frozen in a vacuum container while breaded meats, and white meats tend to do better just in a sealed container.

Fresh fresh fruits and vegetables are often better off in a vented container, or no container at all. While cooked, or canned fruits and vegetables are better off in a vacuum. All fruits and vegetables are better off not exposed to light.

Ice cream, whipped toppings, sour cream and other milk based products are better off in a sealed container

Breads, cakes, and other dough or batter based products are better off in a sealed container, and not refrigerated, but if some icings require refrigeration. In that case it's OK to refrigerate them.

Dehydrated foods should be stored in a sealed container as vacuum can damage them. When vacuum wont damage them, it is better to vacuum seal them.

Now we can go way off base. For long term storage of clothing and blankets vacuum is the way to go except when the clothing might be damaged by the vacuum. For long term storage of paper vacuum is best, and as little exposure to light as possible is better to.

  2. the container with holes is good for when you want your hot food to be covered so that it won't spoil because the hot air can go out of the container but for all purpose containers, i prefer to use the vacuum ones because you can use it for almost anything.
