Question:

Food to make for one person?

my husband is getting deployed, and I my son eats baby food, and my delimma is cooking for just myself. Im pretty health conscious, but If im short on time, i'll eat nearly anything but peas. Can someone help me with like a shopping list and some recipies that I can make for myself? Im also not the hugest fan of leftovers. So making up huge batches of stuff isnt really my thing....please help!

  1. If you don't like leftovers, freeze them, things taste better when you haven't had them for a while. Check out the website www.30daygourmet.com for hints of freezing. There are also lots of great recipes on the message board.


  2. Most meat is sold in larger quantities than needed for one person, so just separate it up before cooking, freeze in individual packages for future. Make a baked potato for yourself, even if you bake a couple at a time, you can use the others for home fries at another meal...for the baked potato, use chili (there's some decent canned chili out there) or cheese and broccoli...All those things can be purchased in small quantities. Buy some round cubes of beef, or even chicken b*****s (cut them into cubes) Saute all of it, then split it up into single servings and you have meat for a couple of meals...to the beef, add mushrooms, some beef consomme, bring to boil, then simmer for about an hour, then add a little sour cream, stir in well and you have a beef strogonoff; use over some wide egg noodles...and you have a nice dinner.

My best advice is to go to your local used bookstore and look for a book (one of the better ones is from Sunset Press) on cooking for one or two (usually titled something like Cooking for One or Two). These books are quite small, but they give you some of the best advice on shopping and preparing meals. I nearly wore out my book when was living by myself! So many good tips!

  5. The hardest thing to do is cook for one or two.

    I would do things like a pork chop, a minute steak, a chicken thigh or breast, and a salad. That way you won't have loads of the dreaded left overs.

    I do not cook much any more as it is only my hubby and me. I used to cook for ranch crew numbering about 50 and it is a shock to try to cut down my recipes and not have a freezer full of the same thing to eat every day.

    Change the seasonings on the meat daily, have a few different things to put on your salads to keep them interesting and have some fruits for dessert.
