  1. You did say meals right? Not sure why folks are giving platter recipes...

For our large gathers I like to switch it up.Our guest love:

    1.Spaghetti, salad & garlic bread

    2. Tacos w/ all the fixings

3.Chili w/ crackers or homemade corn bread(we generally do chili in the winter months)

    4. My husbands favorite;Potroast with potatoes, onions, carrots, corn & peas or your favorite veggies & hot butter rolls.

  2. HIRE A CATERE, THY WILL SET IT UP, OR MAKE A BUFFET, HAVE EVERY PERSON BRING A DINER DISH. AND DESSERT, JUST ORGANIZE WHAT WILL BRING WHAT.

  3. It sounds like this might be finger food type fare?

There are plenty of healthy options for catering affairs for that many people, easy and cost efficient without having to go jumbo potato chip mode.

Whether it be wraps, cut up into finger food sized pieces (buy a couple of different coloured soft tortilla shell packages, and fill them with whatever filling you want, chicken salad, flavoured cream cheese with tomatoes or ham or whaetver- limitless options). Any in the package you don't use can be sealed and frozen for future use (next month you can make them into bite sized quesadillas).

Or go adventurous and learn to make sushi, it doesn't take a lot to have enough for one little tray. Start with something like california rolls and vegetarian rolls or smoked salmon cream cheese rolls if your guests are new to sushi.

Mini quiches are not that hard either- buy a big bag of frozen tartlet shells, bake blind (without filling) the amount you want and then fill them with your egg/milk/herb mixture and ham /cheese or basil/cherry tomato/ or asparagus or whatever, (again, a little goes a long way), and then bake as directed.

Also always a pleaser is a pretty veggie tray (mini carrots, cherry or grape tomatoes, cucumber slices, celery sticks, brocolli and cauliflower florets) that is spruced up with a couple of different dips, be it ranch dressing or hummus or spinach dip or roast red pepper dip or whatever you want to make).

Baked chicken wings (in teryaki or other sauce), or hors d'oeuvres sized meatballs (on a toothpick). Grilled skewers (small ones, on toothpick is perfect one person size).

As for sweets, tartlet shells are also great for filling with pudding or mousse or whipped cream and topped with fresh fruit, a fresh fruit tray with sweet yoghurt dip, layer cake cut into bite sized pieces. Bars (date squares, nanaimo bars), slab cheesecake (bought or make cheesecake recipe yourself just put it in a square pan and cut it into bite sized squares), chocolate dipped strawberries (easy but very pretty for presentation

Lots more I'm sure -those are the first things that come to mind

  4. OMG!!! My Fave: Fruit Salsa with Cinnamon Chips: this is for a serving of 10, but for a party with oter things it should be enough, MAYBE!!! LOL

*You can take cubes of chicken and wrap bacon (and a slice of jalapeno) and bake in oven.

*Bacon wrapped smokies with a handful (3/4 cup) brown sugar on top, is excellent.

*Bacon wrapped scallops are great too!!!

*Marinade shrimp and scallops in deluxe french for about 4 hours and grill!! Excellent!!!

    *An excellent dip is:

    -cream cheese

    -1 jar salsa

    -bag cheddar/jack cheese

Bake at 350* til cheese is melted.

If you need more, let me know!!! I have tons and tons!!!
