  1. Do you really really want to be a chef??? Then I think you have to go to a culinary school.. And culinary schools are expensive... So think really hard on it... You really have to be passionate with it to stay in the culinary industry... Becoming a chef is no easy task of just cooking... Remember that most chefs work 6 days a week, only 1 day of rest if lucky, and work on holidays, christmas, new year, summer etc.!!! Its physically labor intensive, carrying heavy pots and pans, taking the heat and pressure of the kitchen, the angry egotistical head chefs... And now Im sounding so negative and pessimistic.. hehe... But this is the reality... On the lighter side its very enjoyable to be a chef, you get to eat and taste the food which is my favorite, giving your own creative twist on a dish and the people in this industry are really enjoy to be with  people who really enjoy food and life... Im also a chef and I enjoy the heat, the pressure of working in the kitchen but sometime it's more that that... For me being a chef is not just a JOB its a CAREER... And when you think of that, you must think that on this overcrowded industry, what NEW can you offer??? what's your edge??? And right now that's my dilemma... Getting a job is hard but making a mark on this industry is ridiculously unexplainably even harder... So good luck to you... Think really hard on it.. Right now it's just very practical to take 2yrs degree rather than a 4 yr degree in college.. But I understand your mom, maybe you could take up a 4yr college degree in restaurant and hotel management and major in culinary... :)

  2. Do you enjoy cooking and  are creative?  I live in Guadalajara and my daughter 18 is  currently going to International Cookng School here in Guadalajara.  The school is full of boys and girls who want to try something, rather then just  say I have to go to college. When I say boys and girls actually they are all ages. My daughter was not able to get a job in the medical field here so she said" Let me try this since I enjoy Cooking" Even if you  did not become a top chef you would learn a lot. Chefs make very good money and are constantly  in demand all over the world.  I say go for it.
