  1. This is my mother's recipe.  The parmesan cheese and Salvadoran cream provide the tang on the quesadilla.  Keep in mind that it is made with rice flour, not wheat.

    Ingredients:  

    1/4 lb. fresh cheese

    1/4 lb. parmesan cheese

    8 oz. fresh salvadoran cream

    ½ cup of sugar

    2 eggs

    ½ pound of ground rice flour

    2 teaspoons baking powder

    crumble the cheese until fine, add the eggs, sugar, cream and finally the flour sifted with the baking powder, blend until uniform.  Let it rest for 1 hour, then mix with a wooden spoon and pour into a greased pan 1/4 full.  Bake at 325F until golden, about 20 to 25 minutes.
