  1. Yes it is always cooked, type depends on location.  They usually use a soft shell variety of crab.


  2. are you talking about a california roll? If so it is actually not crab at all. It is imitation crab meat (crab stick) which is actually a fish. It is called Surimi.... here is its explination http://en.wikipedia.org/wiki/Surimi this is aslo what you will find in seafood salad

    Other then that, I have never seen crab sushi, if it were real crab it would HAVE to be cooked, otherwise it wuold be like boogers!!! Which is just the constancy of soft shell crab Blech, That would be nasty in sushi

    Second Add on:

    Because Surimi is processed and mixed with other ingredients and formed to look like crab/lobster and shrimp, it is always cooked

  3. Whether it's made with surimi (imitation crab), or real crab, it's always cooked.
