Freezing a cake twice?

I am making a birthday cake for this saturday it is going to be a 2 tiered cake. I was thinking of making the cake today, freezing it, then frosting it tomorrow and then putting it back into the freezer then taking it out to bring to the party... I am not going to stack the tiers till I get it to the location and then put the final touched on the cake. Is that a good I to freeze it then decorate it and freeze it again. I was also reading about decorating the cake frozen. How does that work? I have read somewhere before to make sure the cake is at room temperature before frosting it because it will create air bubbles and cause the frosting to fall off. Anyways I need help? What is my best bet on making the cake. I dont get off work till 4 so I dont have enough time to bake a cake wait for it to get to room temperature and then frost it in one day. Can I make it today and frost it tomorrow?

  1. I wrap the baked layers separately in several layers of plastic wrap & then foil when stacking a cake, Even if it is just 1 day before you need it, it firms up the cake to stack them. I do thaw them before I ice them. I would not ice & then freeze.


  2. There is no need to freeze the cake if you plan on eating it this Saturday.  

    Bake the cake.  Let it cool then cover it well until you can frost it tomorrow.  Once you frost it the frosting will serve as a sealer to keep the air out and to keep it fresh.  I would still try to cover it to keep anything from getting to it.

    Freezing anything twice is NOT recommended.  Freezing a cake can give it that freezer taste so I would avoid that if at all possible.

You don't need to freeze it.  Bake it, cover it well, then frost it tomorrow.  Once it's frosted, it's sealed.  Frosting is an airtight seal that preserves cakes quite well, so you don't have to worry about freezing it after it's frosted.  And whoever said that you can't frost frozen cakes was full of it.  The only problem might be if you were using frosting that reacted badly to moisture and the cake sweated as it thawed.  That might cause problems.  I've frosted and decorated frozen cakes before, however, and never had any trouble.  Sometimes it makes it a lot easier if a cake is frozen, depending on the kind of cake.  A very soft cake can be easier to deal with if it's frozen when you frost it.

  5. Anything twice frozen is not a good idea.  try putting it in the fridge instead before icing it.  that way you don't have to thaw it out, which could interfere with your icing.
